Taco Burger was a star at my New Year party, and it was a last moment inspiration to change the menu. This year Peter and I were in charge of organizing a New Year party. Every year someone else from our friends group organizes. It is a cool system, where none gets burned out from always hosting a party.

The main topic at every New Year party is always what will be served as food. In our culture, people suggest eating pork on December 31 and January 1 because they believe pigs bring luck. Pigs are considered lucky because they are digging the whole year and finding luck. And if you want to be lucky in a year that is coming, avoid eating poultry because they will fly away with the luck. Even though it is just a suggestion, everyone is obeying this rule. No chicken, turkey, duck, geese, or any other poultry is allowed.

With this rule in my mind, at first, I was thinking of doing a pork roast. But, the more I was thinking, the more I didn’t want to eat pork roast. I was craving for something like a burger, but not a burger. And then, the idea hit me. I will make Taco Burgers. Peter loved the idea because he wasn’t really into the pork roast either.

The New Year party went amazing. We had so much fun with our friends, and the food was perfect. Everyone loved my Taco Burgers and asked for more. Making Taco Burgers in front of my friends while talking with them was entertaining. Definitely a party to remember. And besides that, they say how you start the new year, this will reflect on the rest of the year. I loved how I started my new year, surrounded by people who I love, laughing and eating yummy zero alliums food.

I wanted to share a piece of this magic with you. And that’s why my first recipe this year is the recipe that I made for the party. It was the last meal I cooked in 2023, and the first one I ate in 2024.

Ingredients for Taco Burgers

Ground meat – star of the meal and source of protein. It makes Taco Burger delicious. You can use beef, pork, chicken, or turkey. All of them work amazingly. To make it low-fat use lean ground meat.
Small Soft Tortillas – works as a shell that keeps all delicious flavors together, gives a delicious taste of tortilla, and it is a source of carbs.
Tomato – gives juiciness and flavor to the Taco Burger, and it is a source of fiber.
Romaine lettuce – gives a crispy component to the Taco Burger, flavor and it is also a source of fiber.
Cheddar cheese – gives a delicious umami taste, and elevates the flavors of the Taco Burger to the next level. Also, the melted cheese will give a special texture.
Salt – for enriching the flavors.
Freshly cracked black pepper – for giving spiciness to the meal (if you don’t like spicy, or you can’t eat pepper you can omit it – it will not affect the meal)

Easy Taco Burger

Ingredients
  

  • ½ lb. ground meat 225g
  • 4 small soft tortillas
  • 1 tomato
  • 4 oz romaine lettuce 110g
  • 3 oz white cheddar cheese 80g
  • salt to taste
  • freshly cracked black pepper to taste

Instructions
 

  • Wash romaine lettuce and cut it into ribbons.
  • Wash and cut tomatoes into small cubes.
  • Mix the ground meat with salt and pepper.
  • Take small soft tortillas, and place a small amount of ground meat. Gently with hand flatten the ground meat in a thin layer on the tortilla. It should cover the whole tortilla with ground meat.
  • Preheat a skillet or a griddle on medium-high heat, and place tortilla ground meat side down. Cook the tortilla until the meat is completely cooked (it should be done in about 5 to 7 minutes depending on the thickness of the meat). Remember, the meat has to be completely cooked!
  • Flip the tortilla, and top with finely grated cheddar cheese. Keep the tortilla in the skillet for less than a minute, so that the cheese can melt.
  • When cheese is melted, top tacos with lettuce and tomato. Fold them in half to get taco shape and serve immediately.

How to store Taco Burger?

Taco Burgers are the best when they are eaten fresh from the pan or griddle.
I do not recommend storing them in the refrigerator or freezing them because they will lose their taste and texture.

How to make Taco Burger?

Taco Burger is very easy to make, and it is ambrosian.

  1. Wash and cut lettuce and tomato. Cut the lettuce into ribbons, and tomato into small cubes.
  2. Mix ground meat with salt and pepper, and mix it to combine. Salt and pepper will bring out the flavor of the meat, and make it more delicious. In a case that you can’t eat pepper, omit it from the meal. It will not affect the recipe.
  3. In case you can’t find small soft tortillas, take any tortillas and trim them down to 6 inch / 15cm wide. You should get at least 2 small soft tortillas out of one big soft tortilla.
  4. Take small soft tortillas, and place a small amount of ground meat. Gently flatten the ground meat in a thin layer on the tortilla. It is extremely important to have a small amount of the ground meat, and that you flatten it out thin so that the meat can be completely cooked.
  5. Preheat a skillet or a griddle on medium-high heat, and place tortilla ground meat side down. Cook the tortilla until the meat is completely cooked (it should be done in about 5 to 7 minutes depending on the thickness of the meat). Remember, the meat has to be completely cooked! In case that the meat is not cooked, cook it a bit longer. You can press the tortilla with a spatula to thin out even more the meat and be sure that it is completely baked.
  6. Flip the tortilla, and top with finely grated cheddar cheese. Keep the tortilla in the skillet for less than a minute, so that the cheese can melt. Besides melting the cheese, in this step, you are making the tortilla warm and a bit crunchy.
  7. When cheese is melted, top tacos with lettuce and tomato. Fold them in half to get taco shape and serve immediately.
