Take small soft tortillas, and place a small amount of ground meat. Gently with hand flatten the ground meat in a thin layer on the tortilla. It should cover the whole tortilla with ground meat.
Preheat a skillet or a griddle on medium-high heat, and place tortilla ground meat side down. Cook the tortilla until the meat is completely cooked (it should be done in about 5 to 7 minutes depending on the thickness of the meat). Remember, the meat has to be completely cooked!
Flip the tortilla, and top with finely grated cheddar cheese. Keep the tortilla in the skillet for less than a minute, so that the cheese can melt.
When cheese is melted, top tacos with lettuce and tomato. Fold them in half to get taco shape and serve immediately.
ACID REFLUX - sometimes tomato can be a trigger acid reflux ingredient to individuals, and it will cause them the acid reflux. For me tomatoes are NOT causing acid reflux, but some other ingredients are my acid reflux trigger food. Important step with managing acid reflux is to get to know your trigger ingredients, and avoid them. If tomato is causing you acid reflux, please omit it in the recipe. It will not hurt the outcome of the recipe.
