Low FODMAP Ground Meat & Sweet Potato Skillet - From Dora's Kitchen

I love cooking with sweet potatoes, luckily it is available all year round. However, the traditional season of sweet potato is fall. The colors of the season make the sweet potato even more appealing for me to make some delicious meal from it. Low FODMAP ground meat & sweet potato skillet recipe was inspired by the yellow and brown leaves flying by my window on this October day. The colors of the leaves just reminded me of the color of my favorite starch, sweet potato.

Luckily, I had sweet potatoes in my cabinet so I didn’t need to go shopping in the cold. Instead, in just 30 minutes I was done with this meal. Full of flavor thanks to the sweet potato and the combination of the herbs I used. Furthermore, this meal is perfect if you have a sensitive stomach, allium intolerance, allium allergy, gallstones, IBS, or GERD. It supports a low-fat and low-FODMAP diet as well. Ingredients of low FODMAP ground meat & sweet potato skillet - From Dora's Kitchen

Ground meat – co-star of the meal and source of the protein. You can use beef, pork, chicken, or turkey. All of them work amazingly. To make it low-fat use lean ground meat.
Sweet potato – co-star of the meal. It provides delicious flavor, carbs, deepens the dish, and gives a sweet tone to the meal.
Tomato – gives another tone of sweetness to the meal. It will provide nutrients and fiber.
White cheddar cheese – gives a delicious umami taste, and texture to the meal.
Dry basil – perfectly matches to the sweet notes of tomato and sweet potato. It deepens the flavors and connects them with the savory part of the meal.
Dry oregano – gives amazing flavor, and it connects and deepens the sweet and savory taste of the meal.
Parsley flakes – for delicious taste and bringing up savory flavors in the meal.
Ground rosemary – for bringing the flavors to the next level, and bringing the flavors together for a delicious umami taste.
Water – for combining delicious flavors while it is simmering.
Salt – for enriching the flavors.
Freshly cracked black pepper – for giving spiciness to the meal (if you don’t like spicy, or you can’t eat pepper you can omit it – it will not affect the meal)
Cooking oil – for sauteing to get the flavors.

How to make ground meat and sweet potato skillet?

Chopping sweet potato - From Dora's Kitchen

Cut tomato and sweet potato into medium-sized cubes. Try to cut sweet potatoes into uniform cubes. This way it will cook at the same time. Do not cut too big cubes because it will not cook completely.

On medium heat saute the ground meat with constant stirring. You want to crumble the ground meat as much as possible. Use a wooden spoon to break the big chunks of meat into smaller ones. Small chunks of ground meat will make low FODMAP ground meat and sweet potato skillet even more delicious.

Seasoning ground meat - From Dora's Kitchen

When ground meat is mostly browned, but still slightly pink, add salt, dry basil, dry oregano, parsley flakes, ground rosemary, and freshly cracked black pepper. Stir it to combine, and continue sauteing it with occasional stirring until browned. In this step, you are bringing delicious flavors to the meal, and meat will absorb the taste of the spices in this step.

Then add tomato and sweet potato to the pan. Saute it for a minute or two with gentle occasional stirring. Here you want to extract tomato flavor into the meal, and partially close the pores on the sweet potato (this way it will not turn into a mush).

Add water to the pan. The water needs to cover the meal. Be careful not to add too much water because it will turn the sweet potato into mush, and it will be more like a soup. It has to barely cover the food in the pan.

Bring it to a boil and simmer it on low heat until the water evaporates and the sweet potato is fork-tender. Using a lid is optional. If you use the lid, it will trap the liquids and it will cook longer. If you add too little water, put the lid on while you are simmering the meal.

Lastly, add finely grated white cheddar cheese. Stir it a few times to combine the flavors. Then taste the low FODMAP sweet potato skillet and add more seasoning if necessary. For serving ideas, continue reading.

How to serve low FODMAP ground meat and sweet potato skillet?

  • On its own – it tastes delicious on its own. Furthermore, it is a very healthy and nutritious low-fat meal.
  • With rice – you can serve low FODMAP ground meat and sweet potato skillet with rice. It will be tasty, and rice will give extra carbs.
  • Wrapped into tortilla – fill the tortilla with low FODMAP ground meat and sweet potato sauce, grate a bit of cheese, and roll it. The delicious wrap is ready!
  • With bulgur – it will give extra carbs, and it pairs well with ground meat and sweet potato skillet.

Garnish for this meal
Garnish can elevate how the food looks, and it can make it look more appetizing. However, garnish can be a spot where alliums are hiding. In this recipe, I garnished my plate with freshly chopped parsley.

Low FODMAP Ground Meat & Sweet Potato Skillet

Ingredients
  

  • 10 oz ground meat 280g
  • 9 oz sweet potato 225g
  • 1 tomato - medium size
  • 2.5 oz white cheddar cheese 70g
  • 2 teaspoons dry basil
  • 2 teaspoons dry oregano
  • 2 teaspoons parsley flakes
  • 1 ½ teaspoons ground rosemary
  • salt to taste
  • freshly cracked black pepper to taste
  • ¾ cup water 180ml
  • cooking oil - enough to cover the bottom of your skillet

Instructions
 

  • Wash and cut the tomato into medium size cubes.
  • Peel and cut sweet potato into medium size cubes.
  • Add the oil to a saute pan and heat over medium heat.
  • When the oil gets hot, add ground meat to the pan. Saute the meat with a wooden spoon while constantly stirring to crumble the ground meat. Use a wooden spoon to break the big chunks of meat into smaller ones.
