Instructions
Wash and cut the tomato into medium size cubes.
Peel and cut sweet potato into medium size cubes.
Add the oil to a saute pan and heat over medium heat.
When the oil gets hot, add ground meat to the pan. Saute the meat with a wooden spoon while constantly stirring to crumble the ground meat. Use a wooden spoon to break the big chunks of meat into smaller ones.
When ground meat is mostly browned, still slightly pink, add salt, dry basil, dry oregano, parsley flakes, ground rosemary, and freshly cracked black pepper. Stir it to combine, and continue sauteing it with occasional stirring until browned.
Add tomato and sweet potato to the pan. Saute it for a minute or two with gentle occasional stirring.
Add water to the pan. The water needs to cover the meal. Bring it to a boil and simmer it on low heat until the water evaporates and the sweet potato is fork-tender.
Add finely grated white cheddar cheese. Stir it a few times to combine the flavors, and serve it.
ACID REFLUX - sometimes tomato can be a trigger acid reflux ingredient to individuals, and it will cause them the acid reflux. For me tomatoes are NOT causing acid reflux, but some other ingredients are my acid reflux trigger food. Important step with managing acid reflux is to get to know your trigger ingredients, and avoid them. If tomato is causing you acid reflux, please omit it in the recipe. It will not hurt the outcome of the recipe.
