Summer Chicken Salad is one of the most delicious meals to prepare during summer. The combination of tarragon chicken cubes, No Mayo Ranch Dressing, bulgur, and veggies will charm you at the first bite. Besides being finger-licking, it is easy to make, low in calories, low fat, and 100% healthy. My husband loves Summer Chicken Salad, and it is often on our menu during the summer months.

Summer Chicken Salad is a quick and easy summer meal that will make you want to eat again and again. Summer Chicken Salad is completely made without onion, without garlic, and other alliums. It is a perfectly safe meal to enjoy for all of us with allium allergy and allium intolerance. I hope that you will enjoy my Summer Chicken Salad recipe!

Ingredients that you need for Summer Salad recipe

  • Chicken
    I recommend my Lekker Chicken recipe. These chicken cubes will elevate the taste of the salad, and create a delicious and healthy meal. For chicken cubes, you will need dry tarragon, parsley flakes, salt, and olive oil.
  • Yogurt 
    Yogurt is a base for my No Mayo Ranch Dressing. It is the perfect choice because it will provide a creamy texture to the No Mayo Ranch Dressing while being healthy and low-calorie.
  • Dry dill weed
    Dry dill weed is one of the herbs that make ranch dressing delicious.
  • Parsley flakes
    Parsley flakes will provide a slight pepper taste to the Ranch Dressing.
  • Freshly cracked black pepper
    Freshly cracked black pepper will provide a peppery taste and heat to the Ranch dressing.
  • Lemon juice
    Lemon juice will give a zesty taste to the No Mayo Ranch dressing.
  • Salt
    Salt – for enriching the flavors.
  • Lettuce
    Lettuce – you can choose any lettuce. Summer Chicken Salad tastes amazing with Romaine lettuce, Iceberg lettuce, Butterhead lettuce, or Crisphead lettuce. Choose your favorite.
  • Tomato 
    Tomato will elevate the Summer Chicken Salad, and bring more vitamins and nutrition.
  • Bulgur 
    Bulgur is the source of carbs in this salad, and it makes the Summer Chicken Salad a healthy and nutritious meal.

How to make Summer Chicken Salad?

Summer Chicken Salad is one of the easiest and best meals to make during summer or any other day of the year.

Prepare tarragon chicken cubes using this recipe. You can prepare them fresh, or make them ahead as a meal prep and use them in Summer Chicken Recipe. Besides the tarragon chicken cubes recipe, my Air Fryer Chicken Breast recipe can be used as well. Cut the chicken breast into bite-size cubes before you add it to the salad.

Soak the bulgur. Soaking the bulgur is one of the easiest methods of cooking bulgur. All you need is an air-tight container, coiling water, bulgur, and salt. Put bulgur into an air-tight container, add salt, mix it, pour the boiling water (the water level has to be finger thick above the bulgur), and put on the lid. Let it soak for 30 minutes, and then strain the bulgur.

Make No Mayo Ranch Dressing. In a bowl add yogurt, dry dill weed, parsley flakes, pepper, salt, and lemon juice. Whisk it until smooth. Taste the sauce, and adjust the pepper if necessary.

Prepare vegetables. Wash and cut tomato and lettuce.

Assemble the salad. Put the lettuce into a bowl, and drizzle with No Mayo Ranch dressing, toss it well, taste it, and then decide if you want to use more dressing. Then, top the Summer Chicken Salad with tomato, bulgur, and chicken cubes. Drizzle the Summer Chicken Salad with a bit more dressing (optional). And enjoy delicious Summer Chicken Salad. It is best when eaten fresh, so add the dressing right before you are planning to eat it.

How to store the Summer Chicken Salad recipe?

I do not recommend storing Summer Chicken Salad because it will not taste good. Mix the Summer Chicken Salad with No Mayo Ranch Dressing right before you start eating. However, some components can be stored separately.

Refrigerator

No Mayo Ranch Dressing can be stored in a mason jar for up to 3 days.
Tarragon chicken cubes can be stored in an air-tight container for up to 4 days.
Bulgur can be stored in an air-tight container for up to 3 days.

Freezer

I do not recommend freezing No Mayo Ranch Dressing because it will lose the texture, and will not be tasty.

You can store tarragon chicken cubes in an air-tight container for up to 3 months.
You can store bulgur in an air-tight container for up to 3 months.

 

Garnish for this meal
Garnish can elevate how the food looks, and it can make it look more appetizing. However, garnish can be a spot where alliums are hiding. In this recipe, I didn’t use any garnish on my plate.

Ingredients
  

Chicken

  • ½ lb boneless and skinless chicken breast 230
  • ½ teaspoon parsley flakes
  • ½ teaspoon dry tarragon
  • Salt to taste
  • Water - enough to cover the chicken cubes
  • Olive oil - enough to cover the bottom of your pan

Bulgur

  • ½ cup bulgur 100g
  • water
  • salt to taste

Ranch Dressing without Mayo

  • 1 cup yogurt
  • 2 teaspoons dry dill weed
  • 2 teaspoons parsley flakes
  • 3 twists of freshly ground black pepper
  • 4 teaspoons lemon juice
  • 1 ½ teaspoon salt

Salad vegetables

  • lettuce
  • tomato
  • + any other vegetables that you want to put in your salad

Instructions
 

Chicken Cubes

  • Cut boneless and skinless chicken breast into cubes. Place them into the bowl, and season with parsley flakes, dry tarragon, and salt. Toss it until you coat the chicken with herbs.
  • Add the oil to the pan and heat over medium-low heat., and then add chicken cubes. Saute chicken cubes with occasional stirring. Saute it just until the outside of the chicken is no longer pink.
  • Add water to cover the chicken cubes. Simmer it on low heat until the water evaporates and the chicken cubes are cooked through.

Bulgur

  • In the electric kettle, heat the water.
  • Put uncooked bulgur in an air-tight container, and add salt.
  • Pour the boiling water over the bulgur (the water level above the bulgur should be finger-tickled). Put the lid on, and let it soak for 30 minutes.
  • Strain the bulgur if there is any leftover of the water.

No Mayo Ranch Dressing

  • In a bowl add yogurt, dry dill weed, parsley flakes, pepper, salt, and lemon juice. Whisk together until smooth. Taste it, and add more pepper or salt if necessary.

Salad

  • Wash and cut tomato, and lettuce.
  • Put the lettuce into a bowl, and drizzle with No Mayo Ranch dressing. Toss it well, taste it, then decide if you want to use more dressing.
  • Top the salad with tomato, bulgur, and chicken cubes.
  • Drizzle the salad with a bit more dressing (optional).
