Ingredients that are needed for One-pot Creamy Broccoli Pasta without onion and garlic
Pasta – durum, wholegrain, bio, colorful.. – choose your favorite.
As for the shape of pasta, I do not recommend long cut pasta like spaghetti, but short cut pasta like fusilli or penne
Broccoli – fresh or frozen – both make an equally tasty meal and it is extremely healthy.
Sour cream – I love using light sour cream. It gives a nice taste to the meal, and the meal is not too heavy for the stomach
Cottage cheese – fantastic protein source in the One-pot Creamy Broccoli Pasta without onions and garlic. It will make pasta tasty, make it a diet food, and it is an amazing source of protein.
Pasta water – for making cottage cheese sauce more creamy and making the sauce smooth
Parsley flakes – for the taste

Tips & tricks on how to make it good
- Cut the broccoli stem to the same size so that it can be cooked evenly
- Do not cut broccoli stem in larger cubes than 1 inch because it will not cook enough and will not combine well with pasta. Also, smaller cubes will look better, and the meal will look even more delicious
- Do not rinse pasta and broccoli. They have to be burning hot when you are mixing it with the cottage cheese sauce. This way the meal will be delicious, and cottage cheese sauce will stick to the pasta.

- Broccoli is soft
- Pasta is cooked al dente to soft (depends on your preference)
- Cottage cheese sauce – cottage cheese, sour cream, salt, pepper, and parsley flakes are all combined. The sauce is smooth (no lumps from cottage cheese), and it is runny like a yogurt

- Pasta is uncooked
cook it for a few more minutes until cooked
- The cottage cheese sauce is too stiff
add pasta water (one tablespoon at a time) and mix it until you get smooth and a bit runny sauce
- The cottage cheese sauce is too runny
mix it with the pasta, and then put it back on the stove for a few seconds, so that the extra liquid can evaporate

You can store it in an airtight container in the refrigerator for up to 3 days

Ingredients
- 6 oz pasta 170g
- 8 oz fresh broccoli (or 2 cups frozen broccoli florets) 220g
- 1 cup cottage cheese 250g
- ½ cup sour cream or yoghurt 150g
- 1 teaspoon parsley flakes
- ¼ cup pasta water 60ml
- salt to taste
- pepper to taste
Instructions
Fresh Broccoli
- Wash broccoli. Remove with the knife broccoli crown from the broccoli stalk.
- Cut the broccoli crown into the broccoli florets (they should be 1 to 1 ½ inches (2.5 to 4 cm) in size).
- Cut broccoli stalk into small cubes (½ to 1-inch (2 to 2.5 cm)big cubes).
- If you are using frozen broccoli florets, skip this steps.
One pot pasta meal
- Fill the pot with water and put it to medium to high heat. Wait until the water boils.
- When the water boils, add salt, broccoli, and pasta. Cook it until broccoli is soft and pasta is al dente to soft.
- While broccoli and pasta are cooking, make the cottage cheese sauce. In the bowl mix cottage cheese, sour cream, parsley flakes, salt, and pepper. Mix it until combined. Before you strain the pasta, take ¼ cup pasta water, and mix it with cottage cheese sauce.
- When broccoli and pasta are cooked, strain them, and then put them back in the pot.
- Pour cheese sauce on hot pasta and broccoli. Mix it until pasta and broccoli are combined with the cottage cheese sauce.
