Creamy and Flavorful Risotto without onion and without garlic is on my family’s menu at least once a week. It is easy to make, but extremely delicious and finger-licking.

What’s more, there is something magical in the combination of rice, Roma tomato, and cheddar cheese.

Furthermore, it is magic that you didn’t know that it would happen. At least not the first time when I made it.

Creamy and Flavorful Risotto without onion and without garlic came to life one warm autumn afternoon in Prague. I was doing my student exchange program there, and while I was studying there, I was living in a student dormitory. I loved every second of that period, and every meal that I invented or cooked while I was doing my student exchange program brings instant happiness to me, and lots of happy memories.

The same thing happens with Creamy and Flavorful Risotto without onion and without garlic. I was hungry, and I wanted to cook something quickly before my lecture. In my room, I had rice, cheddar cheese, and Roma tomato. I didn’t think when I started cooking that it would turn into an amazing meal.

After I finished cooking, I was amazed by the deliciousness of this simple meal. As a result, I instantly fell in love with it, and I couldn’t wait to make it again.

Ever since that day, I’ve been making Creamy and Flavorful Risotto without onion and without garlic often.

Ingredients that you need for Creamy and Flavorful Risotto without onion and without garlic

Rice – the star of any risotto recipe

Peas – and rice make a heavenly match.

Cheddar cheese – for delicious taste and bringing the risotto to a new level

Roma tomato – giving an extra dimension of flavor to the meal

Parsley flakes – for the flavor

Water – remember, the ratio for risotto is 1:3. On one cup of rice, it comes 3 cups of water

Cooking oil – for bringing out the flavors (you can use vegetable oil or canola oil)

Salt to taste – for enriching the flavor of the meal 

Pepper to taste – for giving spiciness to the meal (if you don’t like spicy, or you can’t eat pepper you can omit it – it will not affect the meal)

Tips & tricks on how to make Creamy and Flavorful Risotto without onion and without garlic good

  • Add salt and pepper at the beginning. The rice will absorb it better and have a better taste.  Be careful not to oversalt the rice. 
  • Grate the cheese finely. It will melt better into a meal. If you grate the cheese coarsely, then it will have cheese chunks. The goal is to have a cheesy taste mixed in the meal, not cheese chunks.

How to know if Creamy and Flavorful Risotto without onion and without garlic is done?

  • The rice should be soft to taste and have a bit of creamy sauce.
  • The cheese is melted.

What can go wrong, and how to fix it:

  • The water evaporates too quickly, and the rice is still uncooked
    lower the heat and add a bit more water.
  • The rice is too salty
    add a bit of rice, and water, and boil it together.
  • The rice is not salty enough
    add more salt gradually. Add little by little and always try before adding more salt.

How to store Creamy and Flavorful Risotto without onion and without garlic?

I do not suggest storing this meal. The flavor is best when it is freshly made, and all the flavors are combined.

If you need to store it, store it in the refrigerator. Put it in an air-tight container for 1 day.

I do not recommend freezing this meal.

Creamy Risotto No Onion No Garlic From Dora's Kitchen

Creamy and Flavorful Risotto without onion and without garlic

Ingredients
  

  • 1 cup uncooked rice
  • 1 cup frozen peas 140g
  • ¼ cup grated cheddar cheese 20g
  • 2 teaspoon parsley flakes
  • 3 cups Water remember, the ratio for risotto is 1:3. On one cup of rice, it comes 3 cups of water
  • cooking oil - enough to cover the bottom of your skillet
  • 5 Roma tomatoes
  • salt to taste
  • feashly cracked black pepper to taste

Instructions
 

  • Cut Roma tomato into small cubes.
  • Grate the cheese finely.
  • Add the oil to a saute pan or small pot and heat over medium-low heat.
  • When the oil becomes hot, add uncooked rice. Saute it. At first, rice will look translucent, but then it will start getting white to pale golden color. Do not let rice get too much of a pale golden color. This should last for a few minutes.
  • Add peas, and saute it for a minute.
  • Slowly add 1 cup of water, salt to taste, 1 teaspoon parsley flakes and let it boil.
  • When water evaporates, add another cup of water, a bit more salt, 1 teaspoon of parsley flakes and let it boil.
  • Add the remaining water, and cook it. The rice should be soft and have a bit of creamy sauce. It should not be dry.
  • Add cut Roma tomato, and stir it a few times to combine with rice. After a minute add grated cheese. Stir it until the cheese melts.
