There is nothing better than a plate of allium-free chicken soup without onion without garlic. It’s an amazing cure when you don’t feel well, and it is one of the most famous comfort foods in the world. 

A plate of chicken soup with pieces of perfectly cooked chicken, and pieces of delicious vegetables will lure a smile to everyone’s face….unless you have an allium allergy, and soup is out of the question for you.

Every chicken soup starts with chopping onions, burning onions, or using a soup cube. Soup cube is a huge nope for everyone who has an allium allergy because it contains onion and garlic. 

This is the reason why I created a chicken soup that is free from alliums, but not free from taste. I’m using a lot of vegetables, and chicken breast to create amazing taste.

Chicken soup is everyone’s well-known dish. No matter where you go, chicken soup is the meal that you can find.  

But did you ever wonder when humans invented the soup? How did they come to the idea to make it? 

The history of soup is a very long one. Archeologists connected the first soup with the making of clay pots. In the event of making clay pots, people had all the requirements of cooking the soup. And that magical moment happened in 6000 BCE in Mesopotamia.

How did they come to the idea of how to make a soup, archeologists don’t have an answer. It could be that they wanted to have something liquid to eat so that they could avoid being dehydrated.  Or they were experimenting with clay pots, and making the soup was a successful and delicious result. 

However, archeologists find a few details of the first soup. It was a soup with meat, and they used hippopotamus. 

In light of the history of soup, the first soup was made in 6000 BCE, and it was made from a hippopotamus. Since that event, soup has become one of the most important parts of every cuisine, and evolved. Nowadays there are transparent and thick soups. Also, there are versions with meat, only vegetables, or a mixture of meat and vegetables. We can’t forget that some soups are made from fruits.

How healthy is allium-free chicken soup without onion without garlic?

Everyone is eating chicken soup when they are sick. But is it just a myth or is there really something in the chicken soup? 

To answer this question, first, we have to define what type of chicken soup there is. We have made a home chicken soup from scratch like this recipe, and store-bought soup. These types of chicken soup have a huge difference. Store-bought soups are full of sodium, but they are seriously lacking in vegetables and meat. Furthermore, meat and vegetables are the things that make soup healthy. 

Chicken soup is an amazing source of proteins, minerals, vitamins, and electrolytes. These are all things that are making us healthy. They are especially important when we are sick, not feeling okay, or having problems with our stomach. 

Eating a plate of soup will make us feel better, give us enough liquids to not be dehydrated, and give us much-needed energy. 

Chicken is rich in carnosine, and this amino acid helps our body with fighting infections. 

Besides that, chicken is full of proteins.

Vegetables are full of vitamins and minerals. By eating soup, we are absorbing those vitamins and minerals. 

In short, homemade soup is an amazing thing for us. It helps us to be healthy, and when we are sick, it helps us get better quicker.

Tips and tricks on how to make allium-free chicken soup without onion without garlic good

  • Take time. Do not rush the soup so that all the flavors can combine together, and nutrients too. 
  • Remove the foam from the top regularly.

How to know if allium-free chicken soup without onion without garlic is done?

  • Chicken is cooked, and the fork goes easily through vegetables.

List of possibilities that can go wrong, and how to fix them:

  • If soup is boiling too much – reduce the heat to the smallest
  • There is not enough liquid – put more water and let it boil

How to store allium-free chicken soup without onion without garlic?

You can store the soup:

  • In the refrigerator  – for up to 5 days in an airtight container.
  • In the freezer – up to 3 months.

Garnish for this meal
Garnish can elevate how the food looks, and it can make it look more appetizing. However, garnish can be a spot where alliums are hiding. In this recipe, I garnished my plate with freshly chopped parsley.

Allium-free Chicken Soup without Onion without Garlic

Ingredients
  

  • 4 oz parsley root 120g
  • 15 oz carrots 425g
  • 4 oz celery root 120g
  • cooking oil - enough to cover the bottom of the pot
  • 1 lb. boneless and skinless chicken breast 450g
  • 3 sprigs fresh parsley leaves
  • 1 cup frozen peas 140g
  • 1 gallon water 3.7 l
  • salt to taste

Instructions
 

  • Cut celery root, and parsley root into medium size cubes. Cut carrots into half moons.
  • Add the oil to a pot and heat over medium-low heat. When the oil gets hot, add small amounts of carrot, parsley root, and celery root. (like a few pieces of each - just to cover the bottom of the pot) Saute it for a few minutes. with constant stirring.
  • Add the remaining carrot, parsley root, and celery root to the pot. Add peas, gently put chicken breast, and add water. Season the soup with salt, and put sprigs fresh parsley leaves. Lower the heat to the lowest.
  • Simmer the soup for about 1 hour. Occasionally skim the foam from the top. When the soup is done, taste the soup and add more salt if necessary.
  • After the soup is done, remove the vegetables, and chicken breast.
  • Strain the soup.
  • Serve the soup with soup with pieces of chicken and vegetables or with noodles.
