Apple Chicken Salad is one of my most famous salads. It is delicious, refreshing, and gentle on the stomach! My family and friends are always asking me to bring my no onion no garlic Apple Chicken Salad to the gatherings and potlucks. It is always the first thing that disappears from the food. I think the secret of being everyone’s favorite is in the fusion of sweet components like cranberry and honey with sour components like Granny Smith apples and lemon juice.
I love making my Apple Chicken Salad during summer because I find it a light and refreshing meal. It is a delicious meal prep recipe that you can enjoy for 3 days. I hope that you will enjoy my Chicken Salad as much as my family, friends and I do.

Ingredients that you need for Apple Chicken Salad
- Boneless and skinless chicken breast
- Granny Smith apple – I find that the Granny Smith apple works the best in this recipe. It has a sour taste that balances the sweetness of honey and cranberries and creates a wonderful fusion of sweet and sour. If Granny Smith is too sour for you, feel free to use a milder variety instead (consider it if you have acid reflux because Granny Smith can be quite acidic).
- Dried cranberries
- Salt
- Pepper – if you can’t eat pepper, skip on it. It will not change the taste of salad. Since I got diagnosed with gallstones, I can’t eat pepper, and I’m making this salad often without pepper and it still tastes wonderful
- Plain yogurt
- Ground cinnamon
- Honey
- Lemon juice

How to make Apple Chicken Salad?
This Chicken Salad recipe is easy to make!
Start with making Honey Cinnamon Salad dressing. Add plain yogurt, cinnamon, honey, salt, and lemon juice to the bowl, and whisk until well combined. Taste the dressing, and add more salt if necessary. You can also add pepper at this stage to deepen the sauce flavor, but it is completely optional. Set it aside.
The next step is to cut the boneless and skinless chicken breast into cutlets. Season them with salt and pepper on both sides.
Cook the chicken cutlets by heating oil in a skillet over medium-low heat. Once hot, add the chicken cutlets. Cook without disturbing for 6 to 8 minutes, or until golden brown on one side. Flip the chicken and cook the other side until browned and fully cooked. The internal temperature should reach 165°F (74°C). Remove the chicken from the skillet and let it rest for 5 to 10 minutes.
Wash and cut the Granny Smith apple into small cubes, and cut the cooked chicken into small cubes as well. Aim for uniform bite-sized pieces.
Place the chicken cubes, apple, and dried cranberries in a salad bowl. Drizzle with the dressing and toss until everything is well coated. Serve Cranberry Chicken Salad cold.

- ¼ cup dried cranberries
- Salt & pepper to taste
Dressing
- 1 cup cup plain yogurt 250g
- ¼ teaspoon ground cinnamon
- 1 ½ teaspoons honey
- A pinch salt
- 1 teaspoon lemon juice
