No Cream Soup Beef Stroganoff Casserole is a wonderful comfort food with a cheesy twist on the regular Stroganoff recipe. Sometimes I get into a creative flow while cooking and completely change what I’m making midway. It is fun, and it is a genius way to explore new meals or create new recipes. Well, the same thing happened when I was cooking dinner one cold fall evening. I was planning on making Ground Beef Wraps, but the moment I was browning the meat, I realised that I wanted to eat something juicy with pasta. I quickly changed my plans and started making Stroganoff, and while I was finishing it, I got an idea how to make it even juicier, infused with cheese, and baked. The result was a flavorful, juicy, and no onion no garlic Beef Stroganoff Casserole. My husband and I enjoy it a lot, and it has become one of our meal prep recipes. I hope that you will enjoy my allium-free Beef Stroganoff Casserole recipe as much as I do!
Ingredients
- Ground beef: instead of ground beef, you can make Beef Stroganoff Casserole with ground turkey for a lighter version
- Button mushrooms: I find the fresh ones work much better than canned ones
- Greek yogurt: you can substitute Greek yogurt with low fat sour cream or plain yogurt
- Allium-free mustard: not every mustard is allium-free, so if you can’t find it, skip it
- All-purpose flour: it will thicken the hamburger casserole and provide a wonderful silky texture to the sauce
- Milk
- Monterey Jack: it will uplift the flavor of Beef Stroganoff Casserole and give texture and flavor to the meal. Instead of Monterey Jack, you can use any other semi-hard cheese, or shred fresh mozzarella for an even lighter meal. It is all up to you. I would suggest grating the cheese on your own because it will melt into the meal better, and it will be tastier.
- Dry pasta: I find that short cut pasta fits the best with this meal
- Dried thyme
- Parsley flakes
- Salt
- Black pepper: if you can’t eat pepper, omit it. It will not change the meal.

How to make no onion no garlic Beef Stroganoff Casserole?
Here is a quick overview of how to make Beef Stroganoff with ground beef with step-by-step photos. Check out the full ingredients & instructions in the recipe card below.
Cut the mushrooms and grate the cheese.
Brown the ground meat.
Add mushrooms to the brown meat, and saute them until the mushrooms become pale brown.
Sprinkle flour, and coat the meat and mushrooms well.
Add seasonings and milk. Simmer it for a bit, and then add allium-free mustard and Greek yogurt.
Simmer the sauce until thickened, but not too thick, because pasta will absorb a bit of sauce. Taste it and adjust the salt and pepper if necessary. Cook the pasta.
Toss the pasta with Beef Stroganoff sauce, stir in the grated cheese, and transfer to the casserole dish. Top it with the grated cheese.
Broil until the cheese is melted and golden brown.

No Cream Soup Beef Stroganoff Casserole
Ingredients
- 1 lb ground beef 450g
- 9 oz fresh button mushrooms 250g
- 16 oz plain Greek yogurt 450g
- 1 tablespoon allium-free mustard
- 4 teaspoons all-purpose flour
- 2 cup milk 500ml
- 1 teaspoon dried thyme
- 1 teaspoon parsley flakes
- salt & pepper to taste
- cooking oil enough to cover the bottom of your skillet
- 4 oz Monterey Jack or any other semi-hard cheese 120g
- 12 oz dry pasta 340g
Instructions
- Slice the fresh button mushrooms into thin slices. Finely grate the cheese.
- Add the oil to a skillet and heat it over medium heat. When the oil gets hot, add the ground beef and saute it with a wooden spoon, stirring frequently to break up the big chunks of meat into smaller ones.
- Once the beef is no longer pink, add the sliced mushrooms. Continue sauteing, stirring often, until the mushrooms release their moisture and they become pale brown. This step may take several minutes, depending on the thickness of the mushrooms.
- Sprinkle all-purpose flour and continue sauteing the meal for about one more minute, stirring frequently. Make sure the ground beef and mushrooms are well-coated with the flour.
- Add the dried thyme, parsley flakes, salt, and pepper. Stir to combine. Then pour in the milk, stir again, and let it simmer for 2 to 3 minutes. Stir in the allium-free mustard and Greek yogurt.
- Simmer the sauce for up to 5 minutes, stirring occasionally, until it thickens. Taste the sauce, and adjust salt and pepper if necessary.
- While the sauce is simmering, cook the pasta, according to the package instructions. If a range of cooking times is listed, use the minimum time. Then drain the pasta.
- Add the cooked pasta to the skillet with the Stroganoff sauce. Stir to coat. If the sauce feels too thick, add a splash of milk. Stir in half of the grated cheese.
- Transfer to a baking dish and sprinkle the remaining grated cheese over the top.
- Preheat the grill/broiler, and grill/broil for 3 to 5 minutes, or until the cheese is melted and golden brown.
Notes
- Instead of Monterey Jack, use any other semi-hard cheese.
- Do not thicken up the sauce too much because the pasta will absorb a part of the sauce.
- I recommend broiling the ground beef casserole. If you don’t have a broiler or grill option, I recommend baking it as short as possible so the sauce will not evaporate, and the casserole will not be dry.
- If you can't find allium-free mustard, skip it, but add a bit more dried thyme and salt.
- You can substitute Greek Yogurt with sour cream or plain yogurt.
