Finally, it is time to enjoy Homemade Tomato Soup without onion! Tomato soup is very dear to my heart, and I love it a lot. My grandma gave me the base for this recipe. She taught me how to make basic homemade tomato soup. During the years, I was changing her recipe, and experimenting with different ingredients and herbs, until I finally created this ambrosian version of Homemade Tomato soup. I cooked this recipe for my grandma, and she was amazed by the flavors and started cooking tomato soup with my recipe. 

Homemade Tomato Soup without onion has a blend of herbs, diced tomato, and tomato paste creating a symphony of flavors that will bring everyone to flavorland. It is completely made without alliums, but the flavor is divine. You can serve it as a starter for your dinner or lunch.

Ingredients that you need for Homemade Tomato Soup without Onion Recipe

  • Canned diced tomatoes
    Canned diced tomatoes will provide texture to the soup, and give a delicious tomato taste to the soup. Also, they will bring nutrients and fiber to the soup. 
  • Tomato paste
    Tomato paste will infuse the soup with tomato flavor, make it delicious, and give a burst of tomato flavor.
  • Dry basil 
    Basil pairs extremely well with tomato because of its sweet aroma and it contributes to the delicious sweet taste of tomato.
  • Dry oregano
    Oregano because of its slightly bitter taste, it works amazingly with the sweetness of the tomato, and it balances out the meal.
  • Parsley flakes
    Parsley with its slightly peppery taste will enhance the sweetness of tomatoes.
  • Dry thyme
    The slightly bitter tone of the thyme will emphasize the sweet taste of tomatoes and tomato paste.
  • Salt – will enrich the taste and bring out the flavors
  • Sugar (optional) will balance the acidity of tomatoes and bring out the sweetness of tomatoes. 
  • Water
  • Flour
  • Oil

How to make Homemade Tomato Soup without onion?

My Homemade Tomato Soup without onion starts by heating the oil in a pot over medium heat. When the oil gets hot, add flour and mix until combined together, and you get a paste called roux. Do not let it burn, it has to be a pale brown color.

When the roux gets a pale brown color, add tomato paste and mix it until it completely combines. You should mix it with a wooden spoon for about a minute or until it is completely combined. Then add canned diced tomato and water. Instead of canned diced tomatoes, you can use crushed tomatoes too. The only difference will be that with diced tomatoes you will have bigger chunks of tomato, and crushed tomato, will make soup smooth. This is all to your preference! Stir the mixture together until smooth.

Add dry basil, dry oregano, dry thyme, parsley flakes, and salt. Give it a few stirs to combine herbs with tomato soup. Place a lid on the pot and allow it to come up to a simmer. Once simmering, turn the heat down to medium-low and let it simmer, stirring occasionally, for 20 minutes. Remove the lid while you are simmering the tomato soup. You are placing the lid to bring the soup to boil quicker in this step.

After simmering for 20 minutes, taste the soup and add salt to taste, or sugar if the soup is too acidic. Serve hot. You can serve Homemade Tomato Soup without onion on its own, or with soup noodles, soup dumplings, or croutons. No matter which one you choose, all the options are delicious!

Garnish can elevate how the food looks, and it can make it look more appetizing. However, garnish can be a spot where alliums are hiding. In this recipe, I garnished my plate with freshly chopped parsley.

Ingredients
  

  • 14.5 oz canned diced tomato 400g
  • 5 oz tomato paste 140g
  • 1 ½ teaspoons dry basil
  • 1 ½ teaspoons dry oregano
  • 1 ½ teaspoons parsley flakes
  • 1 teaspoon dry thyme
  • 0.5 gallon water 2 l
  • 2 teaspoons flour
  • salt to taste
  • 1 teaspoon cooking oil
  • sugar - optional & to taste

Instructions
 

  • Add oil to the pot and heat over medium heat. When the oil gets hot, add flour and make roux.
  • Add tomato paste to the roux and stir it for a minute so it can combine together roux and tomato paste. Add canned diced tomato and water. Whisk the mixture together until smooth. Add dry basil, dry oregano, dry thyme, parsley flakes, and salt.
  • Place a lid on the pot and allow it to come up to a simmer. Once simmering, remove the lid, turn the heat down to medium-low, and let it simmer, stirring occasionally, for 20 minutes.
  • After simmering for 20 minutes, taste the soup and add salt to taste, or sugar if the soup is too acidic. Serve hot.
