Heavenly & Healthy One-Pot Chicken Breast Recipe is a combination of yummy chicken breast and vegetables. That combination is like it came down to Earth straight from heaven.

The Heavenly & Healthy One-Pot Chicken Breast Recipe is not my recipe. This one comes straight from my husband Peter’s kitchen. He is the biggest chicken fan, and when it comes to chicken meals, he is the best chef. Peter is often cooking this meal, furthermore, this is his favorite chicken breast and vegetable combination. Also, this is one of a few meals that Peter taught me how to cook (usually is other way around).

This chicken breast recipe is completely free of onion, garlic, and other alliums, making it the perfect lunch or dinner idea for everyone with a sensitive stomach, who suffers from GERD or has problems with gallstones.

  • Boneless and skinless chicken breast – the star of the meal. Use boneless and skinless chicken breast for this delicious meal. This is the protein in this recipe.
  • Cherry tomato – it will give texture and flavor to the meal.
  • Carrot – it will provide a bit of crunchy texture to the meal and flavor too, plus it gives nutrition.
  • Peas – for texture, nutrition, and taste.
  • Corn – for giving flavor and nutrition to the meal.
  • Olive oil – for marinade.
  • Parsley flakes – for the flavor.
  • Dry basil – for expanding the flavors and umami taste.
  • Dry oregano– for providing delicious taste and umami flavor.
  • Salt – for enriching the flavor.
  • Pepper – for giving spiciness to the meal (if you don’t like spicy, or you can’t eat pepper you can omit it – it will not affect the meal).

Tips & tricks on how to make Heavenly & Healthy One-Pot Chicken Breast Recipe good

  • Cut chicken in even cubes – this way they will be done at the same time
  • Marinade chicken cubes well (mix them with the spoon to distribute the marinade evenly)
  • Cut carrots in the same size – this way it will be done at the same time and you will not overburn the carrot
  • If you are using canned corn and pea, add them at the end so that you will not overcook them

How to know if Heavenly & Healthy One-Pot Chicken Breast Recipe is done?

  • Chicken cubes have a nice light brown color, and the temperature in the thickest part of the chicken cube is 165F (this is a regulation made by USDA click here for more information)
  • Vegetable is soft

Chicken breast recipe: what can go wrong, and how to fix it:

  • Chicken is still raw
    Put it back on the stove, and saute it for a few more minutes
  • The chicken cubes and vegetable is starting to burn and getting dark brown or black spots
    Remove the pan from the stove, and lower the heat. Wait for a few minutes to stove cool down and continue cooking
  • The chicken cubes and vegetables aren’t cooking
    Try to put up the heat a bit, but be careful not to put the heat too much.

Heavenly & Healthy One-Pot Chicken Breast Recipe

Ingredients
  

  • 1 lb boneless and skinless chicken breast 450g
  • 6 pieces cherry tomato
  • 7 oz carrot 200g
  • 4 oz frozen peas 110g
  • 4 oz can corn 110g
  • cups water 350ml
  • salt to taste
  • freshly cracked black pepper to taste

Marinade

  • ½ tablespoon olive oil
  • teaspoons parsley flakes
  • teaspoons dry basil
  • teaspoons dry oregano
  • salt to taste
  • freshly cracked black pepper to taste

Instructions
 

Marinade

  • Cut boneless and skinless chicken breast into small cubes.
  • Put chicken cubes into a bowl, and season them with parsley flakes, dry basil, dry oregano, salt, freshly cracked black pepper, and olive oil. Mix it to combine and let it rest while you cut the vegetables.

Heavenly & Healthy One-Pot Chicken Breast

  • Cut carrot into small cubes.
  • Cut in halves cherry tomatoes.
  • Put the marinated chicken cubes into the pan, and heat it over medium-low heat.
  • Saute the chicken cubes with occasional stirring. Saute it just until the outside of the chicken is no longer pink.
  • Add carrot and saute it with occasional stirring until the carrot starts becoming tender.
  • Add corn and peas and saute it with occasional stirring for a minute or two.
  • Add cherry tomato, and stir it a few times.
  • Add water, and stir it a few times. Simmer it until the water evaporates.
  • Serve Hevenly & Healthy One-Pot Chicken Breast on its own, or as wrap, or with couscous.
