Sometimes you may get stuck in a rut about what to make for lunch or dinner, what to cook today, or what to prep for the week. I get that frustrating feeling too, and I can totally relate. Yes, having a food blog, inventing and testing recipes is fun, but sometimes I get a complete brain freeze and can’t think of a single meal. It happened to me even before I started a food blog, and it still happens today.
After eating just meatloaf, roasted chicken breast, and rice for two weeks straight, my husband and I decided to search for inspiration on our food blog. We each chose five of our favorite meals, wrote them down, and planned our weekly meal prep around that list.

One of my favorite soups in the world is Tomato soup, and Iโm making it often as an easy meal prep. I grew up eating Tomato soup regularly, and whenever Iโm having Tomato soup I remember my family and childhood. Besides having an emotional connection to this recipe, I love how this Tomato soup is silky and creamy, and best of all it is dairy free. You can enjoy it on its own as a light and complete meal, or as a starter.

Parmesan Infused Air Fryer Meatballs is a delicious meal prep recipe that you can easily make in the air fryer or the oven. I love the combination of parmesan cheese and herbs that makes this meatball flavorful, while cooking it in the air fryer makes the air fryer meatballs moist inside and crunchy outside. It is really a divine recipe that my family loves a lot. Sometimes when Iโm making a big batch of Parmesan Infused Meatballs, I bake them in the oven. They still taste divine and have a crunchy texture outside, while being moist inside.

This casserole will charm you with the flavor, and become your favorite meal prep for the week for beginners. My husband loves the flavor, juiciness and texture of this casserole a lot. I think that he loves it so much because it is a low calorie meal which contains all of his favorite ingredients (chicken, rice, broccoli, and cheese).
Sheet Pan Meatballs
Sheet Pan Meatballs is a wonderful dinner meal prep idea that is easy to make, and most of the work is done by the oven. All you have to do is shape meatballs, prepare the veggies and then let the oven do its magic. I love how everything cooks together on one pan (actually baking sheet), and how with minimal prep time I can have a delicious balanced meal.

Oat Crusted Pork Tenderloin
Oat Crusted Pork Tenderloin is a healthy alternative to the breaded meat. My husband and I are big fans of breaded meat, and we always find different recipes to try and enjoy. We used pork tenderloin in this recipe, but it works wonderfully with any other cut of meat. My husband loves how tender the meat is, while the coating is crunchy. Besides that, it is oven-baked, so it is easy to create a big batch of the oat-crusted meat to enjoy for the whole week. Serve it with mashed potatoes, rice, or a side salad.
Sweet Potato Skillet
Sweet Potato Skillet is a one-pot wonder that is bursting with flavors. I love how it is so simple to make, and that you really need one pot. Besides being flavorful and juicy, I love how it is easy to adjust the heat in this recipe. Personally, since getting diagnosed with gallstones, I can barely tolerate anything spicy and sometimes a tiny amount of black pepper can be too much for me. If you are like me and prefer no spicy food, keep it as it is, and if you love spicy food, you can bring the heat easily with cayenne pepper.
Mushroom Risotto
Risotto is one of my go-to quick dinners when I need something cozy that is not pasta. My favorite risotto recipe is Mushroom risotto. It is delicious and a perfect comfort food if you ask me. I love how creamy the risotto is, while the mushrooms provide yummy umami flavor to the meal. For even more comfort, grate Parmigiano Reggiano or parmesan cheese on the top while itโs still warm, and mix it. It will be even more creamy and flavorful.
Turkey Casserole
Turkey Casserole is a delightful meal prep for beginners recipe that will charm you at the first bite. A combination of potatoes, ground turkey, and zucchini, all baked in the oven, will bring joy to your plate. It is a juicy meal that you can make ahead, use as meal prep, or serve immediately. My husband loves this casserole, and while we were scrolling through our recipes to get inspired for our meal prep, he immediately asked if we could have it for lunch the next day.
Vegetable Casserole
Vegetable Casserole is a vegetarian casserole that is quick to make and packed with protein. I love how creamy it is from cottage cheese and yogurt, and how mushrooms are providing a wonderful umami flavor. And the best of all is that it is combined with whole wheat pasta, creating wonderful, healthy, and comforting food. I love meal prepping Vegetable Casserole for the weeks that I know it will be chaotic, and I will need food comfort to survive
Zoodles Bolognese
Zoodles Spaghetti Bolognese is a healthy food comfort that is low in carbs, but huge on flavor. Zoodles are one of my favorite alternative pasta, and whenever it is zucchini season, I will substitute pasta with zoodles. My favorite sauce for zoodles is Bolognese sauce, and I would make it and then toss it over zoodles. It is a healthy, easy, full-flavored, low-calorie, and lunch meal prep that you will love.
