Meal prep ideas are one of my favorite recipes because I can easily have balanced meals throughout my days. Besides having healthy and nutritious meals, it saves time, reduces food waste, and helps with budgeting.

Usually, I do my meal prep for the week on Sunday evening and portion out the food. It works amazingly well, and my family always has delicious, nutritious meals ready to go. Most of the time, we use them as lunch meal prep, but when we are out all day, they are perfect as dinner meal prep too.

After experimenting for years with easy healthy meal prep and testing many easy meal prep ideas, I decided to gather my knowledge and share it here with you. All the recipes are beginner meal prep recipes, they are easy to make, and with them, you can enjoy wonderful and nutritious meals.

Kale Turkey Meatball Soup

Kale Turkey Meatball Soup is a flavorful soup recipe that will keep you full the whole day while being healthy, nutritious, and low calorie. I love it because it requires minimal prep time, and while the soup is simmering, you can catch up with your favorite show, talk with your family or friends, or work on your side hustle. I usually use the time to work on my blog, and I always set an alarm to remind me to stir the soup.

It will stay juicy and full of flavor, even when it is a few days old. It reminds me of lasagna, but it is much easier and quicker than lasagna, while the flavor and juiciness are there.

I was inspired by Greek flavors when I made this recipe the first time, and since then, it has become one of my regular meal prep recipes.
